About the Food:
We make every effort to prepare and serve our food in the most traditional style possible. Our goal is to bring the atmosphere of a Middle Eastern falafel stand to you in Fairbanks, Alaska. For instance, some people mistakenly believe that tzatziki is served with falafel. Actually, tzatziki is a Greek sauce that is served with gyros and it will not make an appearance at Pita Place. However, falafel is also not traditionally served with lettuce, but we find that it adds to the dish without damaging the authenticity, so we have decided to offer it.
Menu for the 2008 Tanana Valley Farmer's Market
Falafel-- Golden fried croquettes of ground garbanzo beans, vegetables and spices.
Labane-- A smooth and tangy yogurt and sour cream spread.
Hummus-- A classic Middle Eastern spread of finely ground garbanzo beans, tahini and spices.
* Pita Falafel--Pita filled with falafel, tahini sauce, and your choice of hummus and fresh vegetables.
* Pita Labane--Pita filled with labane, a drizzle of olive oil, and your choice of fresh vegetables.
* Pita hummus--Pita filled with hummus and your chouice of fresh vegetables.
* Labane plate--A dish of labane topped with olive oil and zaatar (a traditional hyssop based spice mix). Served with Pita wedges for dipping. Optional, four falafel balls.
* Hummus plate-- A dish of hummus toppped with olive oil and paprika. Served with pita wedges for dipping. Optional, four falafel balls.
